Have a Nibble While You Sip
Walk into a coffee house and even alot of bakeries and you’re almost guaranteed to see a nice selection of biscotti.
Biscotti are crisp italian cookies which are traditionally flavored with anise. It doesn’t stop with anise though, there’s vanilla almond, cinnamon sugar, chocolate, cranberry orange, and the list goes on - I think you get the idea. These crispy cookies are the perfect compliment to a nice creamy latte or fresh cup of coffee. Although a bit time consuming with their twice baked goodness, the following recipe is relatively easy to make.
Chocolate Chocolate Chip Biscotti
2 cups all purpose flour
1 cup sugar
1/3 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
2 eggs
2 egg whites
3/4 tsp vanilla extract
2/3 cup chocolate chips
Using a stand mixer fitted with paddle, combine flour, sugar, cocoa powder, baking soda and salt. Mix together eggs, egg whites and vanilla. Gradually add egg mixture to flour mixture, on low speed. Add chocolate chips and blend just until combined.
On a floured surface roll dough into 2 logs, about 2 inches in diameter. Place logs on a greased cookie sheet. Bake at 350 degrees until light golden brown, about 30-35 minutes. Allow to cool about 15 minutes, then cut into slices on the bias. Return to greased cookie sheet and bake at 350 degrees until toasted, about 15-20 minutes.
