Fresh Roast: Honduras Fabio Caballero

Much like its Columbian South American neighbor, Honduran coffee has been thought of as big-can commercial… cheap and cheap tasting coffee. But this misconception is starting to change, and as Sweet Maria’s found, many Honduras growers are delivering high quality beans and drawing an interest in the specialty market.

These Fabio Caballero beans are from the Marcala area of La Paz, Honduras, and produce a very rich and sweet cup, with hints of lemon. Roasted just into the second crack (which they reach faster than most), they begin to give off just a touch of oil and make a fantastic shot for lattes.

Although the beans aren’t currently in stock on the Sweet Maria’s website, I was lucky enough to get a batch in my starter kit. In fact, it’s hard to find these or other Honduras beans from this region in stock on any of the specialty coffee sites that I frequent. Apparently, I’m not the only one who found them to be one of my favorites. Hopefully, Sweet Maria’s will be stocking more soon!
