Low Fat Latte Pops


With summer comes lots of heat. And that heat means I’m always looking for new, cooler ways to curb my coffee cravings. The inner child in me is always going to love popsicles. Since popsicles are a great treat to cool off with during these hot summer months I figured why not create some sort of popsicle using coffee?

Low-Fat Latte Popsicles

I’ve come up with a recipe that’s quick and easy, you’ll be enjoying “Low-fat Latte Popsicles” in no time! While on a recent shopping trip I found an inexpensive make-your-own popsicles set that worked great with this recipe. You can just as easily use small paper cups and popsicle sticks. The recipe that follows is pretty much just a base that you can adjust to suit your taste. I like using my favorite flavors of coffee creamer but you can easily substitute fat-free half & half or milk. And if you will remember recently I shared a recipe for Creamy Coffee Granita, you will find that the ingredient lists and measurements are very similar, but I have added low-fat vanilla yogurt to this recipe for a bit of added creaminess.

Low-Fat Latte Popsicles

Low-Fat Latte Popsicles
2 cups strongly brewed coffee
2 Tbsp sugar
1/2 cup vanilla hazelnut coffee creamer
1/4 cup low-fat vanilla yogurt

Add sugar to brewed coffee, stir until sugar is dissolved. Allow to cool to room temperature. Once cooled stir in coffee creamer and yogurt. Once combine pour mixture evenly into popsicle molds or small paper cups. Place tops on popsicle molds. (If using paper cups allow mixture to freeze a bit before inserting popsicle sticks. ) Place in freezer until frozen solid.

To remove popsicles from molds, run bottom molds under warm water briefly until you are able to remove popsicles.

Yields 8 popsicles.
