Coconut Cream Pie Coffee Cooler


Looking for a cool treat to help you beat the heat, something you can whip up quickly and easily? I came up with this coffee cooler while looking for a way to get my daily coffee fix and keep cool on these hot summer days. I used yogurt as the base instead of milk to give it a thicker consistency. Also, the yogurt offers a simple way to flavor the coffee cooler without requiring lots of extra ingredients or added calories and fat. I added the graham crackers for a bit of texture and to give you the graham cracker crust flavor that an actual coconut cream pie would have.

Coconut Cream Pie Coffee Cooler
8 oz coconut cream pie flavored yogurt
3/4 cup crushed ice
2 tablespoons sugar, more or less to taste
1/2 cup strong brewed coffee, cooled
1/4 cup heavy cream
2 graham crackers (usually half of a cookie sheet)

Put all ingredients except graham cracker crumbs into blender. Blend until combined and smooth. Break graham crackers into small pieces and add to blender. Pulse to mix.

Yields 1 large serving.
